Hi all, might have messed up.
Last night I stuffed some summer sausage. Put encapsulated citric acid in just before stuffing. Was smoking other sausages last night and never got the SS in the smoker. I just realized that the directions say "Do Not use eca if it is curing overnight".
Is the summer sausage wrecked?
Was planning on smoking today.
It's been in the fridge all night.

Go head and smoke it. The texture may be off and the flavor might not quite be right. It isn't going to kill you though. So go ahead and smoke it and give it a sample. At least then you'll know and not just pitch a batch.
 
Thanks fellas. I smoked it and from what I can tell, the ECA didn't release early.
