Put these on this evening at 6 45 .. im off tomorrow so i am taking advantage of it..

lol well I forgot to take pics of the wrap.. I added a little Apple Cider Vinegar .. not a whole lot but I'm hoping enough to be present. dont like it over powering.. I also added Honey Dijon mustard.. I love that mustard, I love almost any mustard though.

thanks Hawg, I gotta be honest here. I'm going out on a limb. I have thought this flavor profile through my head several times but have never tried it.. so of course I'm doing 4 racks.. I'm trying to use other things rather than brown sugar, or sugar based for that matter.. seems like I use brown sugar every time I cook pork..

5 hrs in.. the addition of apple cider vinegar did the trick. think sweet n sour with a spicy midrange .. I think a better mustard would be a brown spicey mustard.. a little more on the mid range .. a couple pieces fell off and I gobbled them up. it's pretty good so far..

Done at 130 am .. so I had a little problem with the camp chef last night .. about 4.5 hrs in it quit working. lost heat. pellet box was full.. The display said FLAME.. I was like , yea no shit lol.. I emptied the ash before I fired it up, so it could not have been full. The Auger was working fine ..
I read in the manual that the auger may have been empty? I dont see how as I keep the hopper box pretty full and rarely gets under half .. it was out for about 25 minutes while I was trying to figure out the problem.. I really dont know why it lost flame..I hit bypass and it fired rite up again..

i ate some last night. its good.. i did 1 spare and 1 baby back with Vinegar and then the other 2 without.. The Rub, its good, i liked it.. Cinnamon is strong you have to be careful with it. a little goes a long way.. Me and dad used to test different pork rubs out on some chops.. i did not get that caramelized style bark that ya get from brown sugar..

Honey Vs Brown Sugar- Honey is more mild, not as sweet .. still present at the end but not as sweet as one would think. so this is no where near candied or overly sweet imo.

What i will do different- I will put the rub on first and use the Honey to glaze with..I will also put the rub on a little heavier..
