Well that was yesterday for me. I stopped by my local Italian market, and saw these massive 2.5" prime ribeye's. And had to buy one, knowing that I could easily get 3 meals out of it for my wife and me. I also picked up 12 $5.00, what I call micro lobster tails and a few potatoes. I heavily seasoned the steak with coarse sea salt and freshly cracked black pepper, and a few sprigs of fresh rosemary.I then tied it into a tight circular shape, which looked like a massive Filet mignon. I tossed it into the freezer for 30 minutes so it wouldn't smash while vacuum sealing.
Then tossed it into the S.V. bath that was set to 138* for 5 hours.

When it came out of the bath, I submerged it in an ice bath to prepare it for the cast iron sear. While it was in the ice bath I fired up the gas weber and threw an old C.I. pan on it to get it screaming hot. Added a few tablespoons of grapeseed oil and 1/4 cup of clarified butter. Tossed the steak into the pan for 90 seconds per side then pulled it of to rest for 15 minutes.
While it was resting I tossed the micro tail on the grill and basted them with the pan drippings for a few minutes.
This was by far the most tender flavorful meat we have eaten in a LONG time. The tails were laughable in size, but really good. And of course I had to have my baked potato.

Im normally not into rare meat, but this steak just might've changed my opinion on that, man it was good.

Beautiful! I love what sous vide does to a thick piece of beef, perfect throughout! Beautiful sear as well.

We do indeed need to say, "Screw It!" once in awhile.
The pic's make it look done more than it really was, although you're right It was more Med/rare than rare.

I should've taken more pic's, it was as thick as a coke can on its side.
I was super rushed, as we needed to deal with some banking issues. We had $10.000+ check, that never made it to who we intended it to go to, but was cashed. It ended up some dirtbag jacked the check, washed it, than put a new name on it, and cashed it.

Our banks fraud department says it happens all the time these days.🤬

That is why there are so few pic's. I was rushed to get food on the table.
 
I don't believe I've ever had a steak that thick! Now I'm hungry for a rib eye! As for the tails, they look more like langastino, or some such spelling that kind of sounds the way I spelt it. Supposed to be some kind of small lobster. Truth be told, I've seen crawfish tails that big...lol I'll bet they were still might tasty, though!

They were about 8" long, the add said cold water wild caught, I didn't look at the country of orgin. And they were frozen, they taste like lobster to me, all three bites of them. LOL!!!

Ar least until I cook a better one.
