So after the first test on the new setup, I decided some wings were in order. I played with filling up the grate to see how it would cook right next to the firebox. Held nicely at 250~ again. Seems to be where this setup likes to sit.

It spent about about 2 hours at that temp before I piled on wood to crank up the temp.

Before adding more wood I removed the thermometer so I wouldn't wreck it. Since I had it so hot I figured I'd throw on some bonus burgers on top of the firebox to see how it would do.

After that I kept an eye on them while the fire was ripping and pulled them when they looked good.

Tossed in some Franks red hot for me and some Cattleman's for the wife.

I must say I am enjoying the mod to the Weber. Now I just need to find a bulk supplier for wood. This thing eats through splits!
