Pulled pork vs chopped pork?

Normally when I do pork butt I separate the muscle groups and then chop/slice across the grain into 1/2” or so thickness. I prefer this to shredded or pulled pork. Anyone else have a preference for pulled vs chopped?
 
I prefer pulled but most of the old school BBQ joints down here have always done chopped. Love hearing the dual cleavers hitting the cutting board in rhythm.

It goes by muscle groups or me. Deep down inside I love a pile of pulled with cole slaw and East Carolina sauce on a big A bun. but, depending on the cut of the butt I'll actually sperate the money muscle and slice with a knife for plate or sandwiches. I really depends on the size and the efficiency of the butcher and muscle groups after cooking.
