Ft Lauderdale.
After my recent sentence to a week in the desert (Las Vegas) for a work convention I was pining for some good home smoked cooking. Ribs are my first choice. before I boarded my flight home I talked with mama to see what was in the freezer. I was told a slab of Publix St Louis ribs. I bragged here about the last slab which were non-branded in plastic wrap. They meaty and good. Told her to take them out and I would smoke them on Saturday. Made up a fresh batch of my rub, and readied the kettle for a cook.
I watch too many BBQ shows which are poorly produced and edited and see dudes ( and Dudettes) cutting these perfectly squared ribs for their turn-in boxes. I don't know where they get these perfectly shaped ribs. But I imagine they cook and edit several slabs for the money cuts.
anyways the cook went as expected until time to rest and cut. I know they're just for us, but just once I want a picture of some perfectly sliced ribs.
This slab was as cockeyed as I've had for awhile. they were good, just not pretty. and FWIW I still prefer the WSM for ribs versus the kettle with my SNS basket/water tray.
