Our Costco is now ONLY carrying skin-on pork bellies.
I'm going to be in the McKinney/Melissa area, probably going to hit H-E-B just to experience the legend, but might head to Costco as well if it's beneficial to me. But would like to find some FULL and thick pork bellies. My Sam's has skinless, but they're smaller (halves or less), usually poorly shaped and usually thin and not great for bacon. Also usually only have 2-4 of those out at a time.
So I'm wondering if I can make my trip a little more worthwhile by loading up on some pork bellies to make bacon with.
Also getting a couple of BONE-IN Berkshire pork bellies this weekend from another source. Seriously stoked about that! W00T!
