Asian Night at Casa Relleno

Decided that I wanted some Asian cuisine for dinner, and the family agreed with me.
Time To Get It On!

MENU
Teriyaki Chicken
Vietnamese Pork Spring Rolls
Veggie Fried Rice
Sunomono, Japanese cucumber salad
Green Beans with Onion-n-Garlic
Baby Bok Choy, sauteed in butter - and some finished in Oyster sauce

Teriyaki Chicken
Boneless-skinless chicken thighs cooked on the griddle.
In a skillet add the chicken, very thick teriyaki sauce (I'm liking the P.F. Chang's) and pineapple chunks.
Cook over medium high heat until the sauce glazes the chicken.

Pork Spring Rolls
Frozen Vietnamese spring rolls from my local Asian market.
I can't type in Vietnamese nor pronounce the name/brand.
Some of the best spring rolls I've ever found.

Veggie Fried Rice
Sauteed Carrot, green beans, green and yellow onion, bell pepper, peanuts and minced garlic.
Scrambled eggs.
Jasmine rice, rinsed, sauteed in butter till golden, cooked in chicken broth.
Soy sauce and a very thin teriyaki sauce.

Sunomono, Japanese Cucumber Salad

4 c Cucumber, halved, seeded and sliced thin
Use Kyuri (Japanese) or Persian if you can find them, and you won't need to de-seed them.
Some people salt the cukes to draw out moisture and then rinse and squeeze.
I don't think it's needed with either the Japanese or Persian cukes.

You can add other veggies if you like,
E.g. Wakame, garlic, green onion, onion, bell pepper, cilantro, mint, Jalapeno or Serrano chiles.

Sauce
1c Rice vinegar
4T Soy sauce and/or Fish sauce, 1/2-1/2 is great.
3T Mirin
2T Sugar
2t Sesame oil
Toasted sesame seeds
Marinate and chill for a hour or two, drain and serve.
Crushed red pepper if you like a little spiciness.

Holy craaaap, that all looks Kill'er!!!
I love sonomono with slices or raw Abalone in it, it's amazing.
A sushi chef that I used to bring Abalone to too perpare for us turned me on to it. I was instantly hooked, it's also kill'er with FRESH raw sea scallops in it.
Unfortunately, we can't Ab dive anymore here in communist Cali.

That is one awesome meal, John.

I used to watch my paternal Grandfather dive for abalone in Ocean Beach, SoCal.
We both ate them and he made jewelry out of the shells for a hobby.
I still have lots of Abalone shells.
So glad I left SoCal in '96, they've went off the deep end.
John, I really don't know what to say. Asian flavors are at the top of our list of favorites and what you created is amazing looking and I bet tasted 100 times better than it looked...

I like that plate too, as a plate of food to fill my belly, and for presentation/pics.
I know I'm not the only one who has a collection of plates, platters, bowls and etc just for props.
