As I mentioned in a post on Monday (my fist since in many, many months) a friend of mine's birthday is on Jan 1. His wife asked me to smoke ribs and chicken for about 20, though there was going to be a a good bit of other food as well. I hadn't manned a pit in quite a while and had a nice scrimmage smoke on Monday.
Well yesterday it back in the saddle at full speed. 6 racks of ribs and a couple of birds. I used the UDS with a rib rack for this smoke.
Birds split and in a Kosmos chicken soak the night before. And into the fridge of course for a nice nap.
3 racks of baby's and 3 SLCs rubbed at around 7am yesterday.
Hadn't used a rib rack in a while but it came in handy yesterday.
Put the ribs on at around noon. Couple of hours in on the UDS with KBB and some hickory chunks. Running the Auber PID at 250*
Got the birds out of the brine so the skin would dry out.
Sorry there aren't plated pics or more pics of the finished product, but everything came out pretty darn good. Maybe a rack of ribs left and a couple pieces of bird left after the party. Didn't get the skin crispy like I usually do but the bird was nice a juicy.
