Just do some test burns with no food and see how it likes to run, to start with. My OKJ Highland likes to settle in at about 175°F. It doesn't run there constantly as temp swings on either side are pretty normal with offsets. If I try to hold temps lower than 175, it's a losing battle trying to chase temps.
175° Fahrenheit?

Went to Lowes and got hands on with a new OKJoe. It made me feel way better about the quality of the pit i just bought.
The new Joe was no thicker than this mystery pit, and I already have a smoke stack at grate level.

Now that I think about it, it is made like the New Braunfels offsets. They have the firebox on the left and plastic wheels as well.

I am currently looking around on Marketplace for my first offset.
I have come across this one pictured below and thus far cannot tell what brand or model it may be.

Anyone know a possible make/model for this smoker?
Reminds me of a older New Braunfels with the body shape, the fire box access, and the straight legs.
I know chargriller bought NB in the early 2000's and I believe the legs changed to bent tubing at that point, so it would be before then if it is an NB.

I've been unable to find any other smokers online that have a right side stack that is in the center of the barrel View attachment 715906
New Braunfels Smoker - OR - Oklahoma Joe - both are the same.

Not exactly ......... the fireboxes are on opposite sides.

OKJ also has steel wagon like wheels rather than plastic.

It look like the stack has been modified at some point?
Original location for sure. If it was modified it was done well.
I don't think the fella i bought it from had the skills to make something that looks so factory, but I could definitely be wrong

Maybe someone modified for him or I guess his son of I remember correctly. All that aside, nothing else matters until you fire it up and see if it's worth a darn. That's what I'm waiting for.

Sounds like I will test drive before putting the wrench to it.
Is the hole between fire box and cook chamber normally that large on other offsets? In my head it should be about half the size it currently is.
What's tripping me out about that fire box is that the opening is in the middle and not at the top. Kinda like the fire box is mounted high. It will be interesting to see how it burns.

Been waiting out a potentially historic rain storm. Hopefully tomorrow (4/6/25) I can fire it up and put some biscuits on it

I agree, it's weird how large of a hole is cut overall.
I have a feeling I will be RTV-ing between it and the cook chamber

It comes through here then down your way . Finally quit so I could take the dog out without getting soaked . Had some light hail yesterday .

Been a rough start to spring for sure. We got maybe a lot of rain coming over night and some tomorrow, but it is supposed to quit for a few days after that.
