Flank steak from Dexter steer. Another one of my favorites.
Homemade rub (guajillo, smoked serrano, garlic, paprika, brown sugar, salt).
Cooked over oak/mesquite wood fire on santa maria grill, maybe a little on the rare side.
Nice smoky beef flavor. Wife was happy.
Spinach sautéed with garlic, splash of lemon.

That looks marvelous! Perfectly cooked IMHO. That and I'm really liking the look of the spinach.

Looks amazing and that rub sounds delicious. Did you smoke the serranos?
Yes. I grow them till ripe (red), split open lengthwise, sometimes remove seeds.
Put hot plate with pie tin and wood pieces in bottom of WSM.
Smoke chiles on wire rack for several hours. Sometimes I finish it off in dehydrator.
I used to do jalapeño/chipotles but have been doing serrano chiles lately.
