4 lb cheddar, 2 lb mozzarella and sea salt. 5+hrs with the amazing... cheddar is great, mozz is mild. Wrapped and in the fridge. We are doing coffee hour at church in a few weeks... smoked c
heese and salmon sound good.... pork shoulder for pulled pork next weekend (after I go fishing...)
 
5 Hrs a man after my own hart.  I like smokey and the Cheddar  should be perfect.  The Mozz maybe a little long for me and you say mild. The salt could have gone longer I did some kosher in two smokes about 7 hrs total and i think i might smoke it again. Please let us know how it turns out.  What kind of wood flavor did you use?
