Well this was my first whole packer. It was honestly amazing and I wouldn't make any changes to my process. I was intimidated at first however realized after that its pretty straightforward. Now I can't wait to smoke another one!

Simple salt, pepper and garlic powder rub. Smoked at 180 until I hit the stall which on this one was around 150 IT. Wrapped in foil with a little broth, bumped temp to 225 and started probing at 200 IT and every 2 degree increments until probed tender which was at 204.
