Final internal temp question

Got a question and was hoping for a quick answer......
I have a 10lb pork butt I've been smoking at 225. It went 15 hrs and after that, an int. temp of 165. I then wrapped it and bumped the smoker up to 250. I got it to 180, but had to leave and won't be back for a few hours so I had to take it off. I wrapped it in a beach towel and placed it in a cooler.
I'd normally get it up to 195-205 before I remove it, but couldn't today. Should I throw it in oven wrapped for a while when I get back or is there a better remedy??

Hi there and welcome! If you want pulled pork I'd put it in the oven. If you want smoked pork chops or steaks I'd cut it and eat it. Depends on what you want in the end.

Welcome to SMF. tallbm tallbm has you covered.

I recommend cooking butts at 275. 225 is just a sufferfest of unnecessary long cook times.

I got it to 180,
180 to 195 is sliceable for pork . It's good like that , but not pulled pork if that's what you're looking for .
Pork cushion . Comes from the shoulder .
