I have a full week, doc appts and a sourdough class tomorrow with my friend Lesley. I gotta work in 10 boules of SD for the farmers mkt on sat.

First 2 getting ready.

Active starter 65g

Mix and let the water do its thing.

Cover and autolyse for an hour.

Bulk ferment done now shape.

Cover and rest for 30 mins.

Pull and form again, then put in banneton.

Cover and in the fridge.

Got 2 on the counter , and gonna mix up another tomorrow .

Does your oven have the hidden bake element ?

I don't use the silly string slings, but use parchment paper.
I put a good layer of corn flour on the bottom in case I slop the drop.
 
What is the going rate at farmers market for one of those beauties? I never see them at our farmers market but I gotta think it’s worth $10-$15 per?
 
Nice work on those . 8 more to go . When the word gets out 10 won't be enough .
