Some 10 years ago I dabbled a bit. Chargriller side box smoker, though even then I didn't have near as much time as I would have liked to babysit the smoking part of the game. I did have a lot of fun experimenting, though I know I don't have anywhere near the time needed to sit all day and run the charcoal.

I've been looking into pellet smokers for years at this point. Set-forgetish and proceed with the yard work. I ultimately bit the bullet on a Recteq Deck Boss 590, figured I'd buy hopefully once and not regret it. First order of business is going to be beer can chicken, I might throw another on a pineapple core for testing. Otherwise, I've been wanting to do a rack of ribs for a long while - and they're affordable to boot.

My preference would be to spatchcock the chicken and brine to your desired salt level

Hudson Valley, NY. To be honest, I'm thinking do a beer can, and on another shove a pineapple in the chicken and see how that goes. An affordable test should it turn out meh.
 
Second cook on it last weekend. I forgot the pictures of it on the grill, next time. Easy Mac recipe - just throw it in a pan and stir a couple times. The loaf is a rectec recipe. Tastes great but was a touch dry, I have a few changes I would make next time to keep it moist.
