Built my 3rd smoker finally after building a water stuffer and finally got some of my unused pole barn steel on it. It's got R-13 insulation between the aluminum and osb and can hang a venison leg or lots of sausage. Have a wood box in it currently but also have a propane and electric burner for it. Total investment= free with used parts. Has 2 turkeys, a bunch of bacon and some summer sausage under its belt so far. Any tips for temp regulation while using charcoal/ hardwood ?

get a baffle over the fire pit when using charcoal for even heat flow and to prevent flare ups. You can use a metal sheet with holes drilled in it, or expanded metal covered in very large gravel (2"~3" stones).
