Well, it’s been a minute or two since I last posted a cook. I haven’t been smoking much lately, so I gave my Recteq, which was my last smoker to my Grandson. He & his wife just moved into their first home & I thought they could meet a lot of the neighborhood by just firing up the smoker. Anyhow Publix had a BOGO on STL’s, so I grabbed 2. I still have 2 kettles, a Camp Chef flat top, & the old Genesis gas grill.
So this is how I started grilling & this is what I returned to, the good old Weber kettle. Also have the plywood table on the trash can.
The last time I made ribs we tried party ribs & really liked them, so that’s how we rolled this time. Ended up with 5 ribs & one end with 3 small ribs in it. I used mustard, then rub on all 4 sides.
Got the kettle fired up with a small split of mesquite as a buffer to keep the coals on the side.
Had a couple of pieces of Andouille, so I put them on with the ribs for a snack.
Getting some nice TBS from that mesquite split, I have the bottom vent about 1/4 cracked open & the cooker has settled in running between 275 & 300.
At about one hour in the sausage is done & I’m going to rotate the ribs 180 degrees.
Quick little snack, just can’t cook anything anymore without putting some sausage on too.
The ribs definitely have some bark on them & they are done, but I still want to sauce them. So cover all 4 sides with sauce & back on the kettle for a couple of minutes to set the sauce.
And the first bite!
This may have lit a spark in me. Judy & I had a great Memorial Day together & the ribs really hit the spot. I know the other rack will be cooking on the 4th of July! I guess I like tending a fire, didn’t really know how much I missed it. Thanks for stopping by guys!
