Well, it’s been a minute or two since I last posted a cook. I haven’t been smoking much lately, so I gave my Recteq, which was my last smoker to my Grandson. He & his wife just moved into their first home & I thought they could meet a lot of the neighborhood by just firing up the smoker. Anyhow Publix had a BOGO on STL’s, so I grabbed 2. I still have 2 kettles, a Camp Chef flat top, & the old Genesis gas grill.
So this is how I started grilling & this is what I returned to, the good old Weber kettle. Also have the plywood table on the trash can.

The last time I made ribs we tried party ribs & really liked them, so that’s how we rolled this time. Ended up with 5 ribs & one end with 3 small ribs in it. I used mustard, then rub on all 4 sides.

Got the kettle fired up with a small split of mesquite as a buffer to keep the coals on the side.

Had a couple of pieces of Andouille, so I put them on with the ribs for a snack.

Getting some nice TBS from that mesquite split, I have the bottom vent about 1/4 cracked open & the cooker has settled in running between 275 & 300.

At about one hour in the sausage is done & I’m going to rotate the ribs 180 degrees.

Quick little snack, just can’t cook anything anymore without putting some sausage on too.

The ribs definitely have some bark on them & they are done, but I still want to sauce them. So cover all 4 sides with sauce & back on the kettle for a couple of minutes to set the sauce.

This may have lit a spark in me. Judy & I had a great Memorial Day together & the ribs really hit the spot. I know the other rack will be cooking on the 4th of July! I guess I like tending a fire, didn’t really know how much I missed it. Thanks for stopping by guys!

So great hearing from you Al. That is a fun cook. That color you got on the ribs is awesome. I doing vortex ribs for the river rats Friday. I put my old 22" in back of truck and been cooking on the river on Fridays. Really enjoying doing it.

Really happy to read this Al. I've had a few breaks from the forum and during my last time active I was disappointed to read some of the troubles you were having.

Have learned a lot from you over the years and glad to see you back in action.
 
Top notch thread as per usual Al. Great to see you back! Awesome that Judy and you are well. And getting back to the tried and true Weber Kettle is so cool! Those ribs and the meal in whole is just mouthwatering!

I am sure the RT will be respectfully used.

As I get older, I am appreciative of the older school cooking I used to do… vs the ease.

Just recently acquired a Weber that looking forward to cleaning up and cooking on…

That is very worthy, thanks for putting that up there Keith.
Well, I had to try out all the cool new buttons we have on the back end!! LOL!! The Some of the problems with posting a thread to the carousel have been fixed, others are till being worked on de-bugging. But Like anything new, we will adjust.
 
Great to read this Al and that Judy and yourself are doing fine. Like mentioned , your grandson will enjoy your rig for sure.
And The Back to Basics as you call it is fantastic. ribs look perfect , no wonder you both enjoyed them.
