I have an electric smoker. (the Smoke Hollow)
my initial plan had been a commercial marinade (e.g. Moore’s or Dale‘s) and slow roasting like a pork shoulder at like 220 give or take. But, I’m not absolutely married to this idea.

I've found some 1-1.5" ribeye steaks. My usual is doing them on the grill.....but my grill is dead and cannot be resurrected.
So, I've decided to try doing them in my smoker. This is new for me as I've only done ribs and pork shoulders in the smoker up...

What internal temps are you guys cooking brisket to? I see Baylor went to 200...but many smoker recipes that I see use temps much lower than that.

Second run last weekend....
3-2-1 St. Louis ribs. Absolutely fantastic! At the store, I compleatly forgot to pick up apple juice....so, instead, I used what I happened to have on hand: CranApple.
If you get the chance to try it, give CranApple a try mixed 2:1 with cider vinegar. Possibly...
Finally was able to get the Smoke Hollow hauled up to my deck (some 17 feet in the air, about 15 steps up the staircase) and warm enough weather to give it all a go.
Alas, it did not occur to me to take any pics...but I am quite happy with my first run as well. 8lb shoulder for pulled pork...
