Just getting started on my smoking adventure and I'm unsure if its ideal to replace the wood through the entire time. Also should there be water in the reservoir the whole time too? I have a pit boss silver 3

Welcome to SMF. Meat will only take smoke for only so long, in the 150-170ish range, so not its not necessary to run chips the entire time. As far as the water pan, cant help on that one but I know with my MES, no water needs to be added as they are sealed tight enough the added moisture does nothing to aid in your cooking.
