My first shot at summer sausage so I went with a High Mountain kit for the ease. Venison and pork, mixed according to directions. Picked a cold day to the temp was easy for me to keep low and still have a fire. I use apple wood for everything, just happens to be what I like. Did a small batch of 12 lbs, approx 3 lbs each. You’ll notice only 3 tubes plus a little left over in the pick. That’s because I left the tubes out on the counter as I started the fire. That’s all my Rottweiler/German Shepard needed to take down an entire tube. Yep, about 10-15 minutes. Impressive really.
As for the sausage, it turned out fantastic. Great consistency and flavor.
