Hey folks!  This is my first post.  I'm from the north Georgia mountains, but recently changed my address Israel.  I grew up around good meat, BBQ, and a bit of smoking.  My wife bought me a Webber Kettle and had it shipped here for my birthday (which was amazing).  But here in Israel it is not easy to buy wood chips and chunks for smoking (You can find a cord of wood, but I don't really know of what.  Chunks and chips are what I used in my minor experience doing the smoking in the States.  So I recently bought a hand ax and I went to town on [what I believe to be] an acacia tree that fell this morning.  So now I've got some good chunks and chips of that.  There's a lot of olive and citrus trees here so I'll get that too when it falls.  My question is, what should I do with it now?  It's fresh wood.  Also, it's an arid climate and doesn't rain from about March to October with of course plenty of heat and sunlight.  The cord of wood is available at a bbq store so maybe that's good?  Smoking just isn't as big here as in the states.  Thank you very much.
