Found a 3.5 lb tri tip with a nice fat cap at Wally World . Since the rest of the family prefer med/med well , I decided to do a long smoke.
Rubbed it down good with Meat Church Holy Cow and injected with Kosmos Q Reserve blend. Let it ride @ 225 with pecan chunks for 4 hrs to 160 IT. Then got a paper wrap and smoke for 2 more hrs to probe tender @ 203*. Loaded with great beefy, brisket-like flavor and very juicy. Gonna try a grilled 1 this week.
Thanks for looking
Keith

Looks good . I saw some guys do them like that on BBQ pitmasters . Nice work .

Thanks chopsaw and a thank you to the member that posted the chart on the proper way to slice the TT !

Yes sir, I do T-tips this way often enough. They are great probe to tender. They are great at 130* too. Long live the Tri-tip.

Looks good. I’ve always done mine to about 135* but have seen this a couple times. Gonna have to give it a try for the next one

I think I will try this next time. Usually, I grill mine to med/rare then slice. I take the slices for my wife and sauté in butter until med/well. This method may kill 2 birds with one stone.
