Man that looks great. Have not made that in a while. I also like getting the fresh pineapple and using the base and top in the cook.
Well done.
As for alternate ways to cook here is my 2 cents. I have a 22" Webber and what I like to do is build a fire on each side and put the meat right down in between, not on the grill. Kind of like indirect. I just let it go until done and you get alot of different textures/temps when you slice it up.
