decided saturday night to smoke sunday.(1st mistake)
went sun am to local grocer and bought ribs ,pork chops and 10 lbs of leg 1/4's.
got the MES out and got it heating.
Put the chicken in to brine for a few hours while i trimmed up the ribs and seasoned everything else.
hit the ribs w/ rub and brown sugar and set them on the counter .
seasoned up 4 ribeyes for the pit and by now the MES is reading 257 .Ready to load some meat. fired up my amns .foiled the water pan and filled half way w/ boiling water.
loaded the MES w/ meat and closed the door. not getting any visual smoke from my AMNS . dropped a handfull of chips in the chute just in case.
Internal temp dropped to 140 and would not climb? it slowly climbed back to 176 and i couldn't figure it out. Reset MES ,No change. Temp slowly climbed to 180. reset MES again! By now i'm getting into danger zone time so i decide that the old MES has finally
bit the dust and take everything out to finish in the oven.
As i pulled the meat out of the MES it looked like it was close to done. checked the internals and the chicken was at 148 ,the ribs were real close on the bend test but had no drawback. Finished it all in the oven and to the fridge it went. will portion and vac seal today.
Things i learned yesterday,
Do not wait till the morning of smoke to try and prep. Do not count on something working just because it did last week. When you are in a rush things will go from bad to worse
just because they can.
BTW, I let my MES cool off before putting it in the shed. b4 putting it up i decided to plug it in and the dang thing worked fine w/ no meat in it.
Don't know if the control panel is going out or the readout has gone bad or ???
