Wednesday is smoke day, but it's going to be frigid. It'll be ten days of cure, I used tender quick.. Can I wait till warmer weather or do I have to smoke. Was thinking of trying to find a welding blanket for the smoker. If I can wait what do I need to do. Oh and I have a offset smoker.
 
Are you hiot smoking or cold smoking the bacon?

I cold smoke all of mine so cold temps are perfect. I have had to add heat when the outdoor temp is below freezing.
 
Unlike Case, I prefer to hot smoke my CB, that way it's ready to eat anytime.

I just nuke it for 15 seconds & I'm eating.

If you decide to hot smoke it, you probably only need to get your smoker up to around 200 degrees.

The finish temp for CB is 145 IT.
