Many people (myself included) purchase the A-Maze-N pellet smoker (a.k.a.,
AMNPS) and use that to generate smoke. The advantage to using this is that you get continuous smoke, without those starts & stops that you get as your electric smoker cycles on and off (which it does to maintain the set temperature). The smoke from the chips often dies out between power cycles.
Another advantage is that you don't have to keep going outside and feeding more chips into the chip loader. The
AMNPS can usually provide enough smoke for the entire cooking cycle.
Even better is to put the
AMNPS into an external enclosure (often called a "mailbox mod"). This usually provides a better quality of smoke (less creosote) and also lets you do cold smoking.
As for the rub, you can't beat Jeff's two rubs. Purchasing the recipe will be the best money you'll spend this week, and you get a killer BBQ sauce recipe that is, IMHO, the ultimate sauce for pulled pork.
