Lookin' GOOD, Chad! The clothes pins to hold the pan rims together is good idea, too...especially when you're in a 'pinch'---hah-hah!
I prefer to use the pans myself. I had a leakage issue the last time I used just double-layer foil for spares (bones poked through). I've never been disappointed using pans.
I have a bbq supplies order waiting for me to pickup...I have 3 large (12" x 18") aluminum baking pans, which I'll use to replace the foil pans, and still use foil for tenting the meat. A bit spendy @ $16.00 each, but I won't have to worry about the pan collapsing when I'm handling them without the smoker rack or a tray to support them.
Cleanup of the pans isn't that difficult either, sometimes a half hour of soaking and they wipe pretty clean.
Good smoke Chad, and creative thinking when you're under the gun!
