I was wondering if anyone out there who owns a PK360 grill has or is contemplating drilling a small hole in the side of the grill to accommodate temperature probes.

I don't have a real need for a probe in my 360, but if I was using one, I'd just close the lid on the wire. Or run it up through the clean out hole at the bottom of the grill.

I'm not familiar with your smoker, but I have numerous holes drilled in all of my smokers for probe wires.
It doesn't affect the performance of the smoker in any way.
