i just purchased a new oklahoma joe longhorn smoker and was curious on how to season the smoker. cranked it up just like i was going to smoke something and let it get to temp (250-200 dgrees ) a will smoke for 2-3 hours. is that the right procedure, and is there anything else that i need to do to it before i smoke something of value?
 
Just wipe the inside with any type of cooking or mineral oil and build a hot firein both the cooking and smoking chamber and let'er rip. That will get rid of any nasties and will season lt.

Now thats a nice unit I have seen many of them. Now for your seasoning the thing I would like Bill (grampys) said rub/spray it down really good with some cooking oil or pam and then just build a great big fire and let it go. Then your ready to smoke on and enjoy some killer food too.
 
i have a okie joe and this is what i did ...took a can of crisco and wipe the entire inside of the cook chamber liberally and then started a huge fire and let it run ....i did mine up to 500 degrees and let it burn itself out ....lasted for about 6-7 hours ...and the next day it was well season and ready to go......congrats on the smoker i love mine and would not trade for anything....need to do some mods to make it more efficent it doesnt take much.....charcoal basket , lower the stack to grill level , and maybe tuning plates ....thats about it for these things.....enjoy
