Hi there! Just got a new Masterbuilt digital electric and smoked chicken thighs last night and homemade sausage today. I'm smoking the sausage at 200f, but I'm not quite sure how long they should go. Any ideas?
 
Are they fresh sausage, or cured.
It sounds like they are fresh, so you would take them to 160 IT.
If they are cured, then there is a whole process in getting them done.
What kind of sausage do you have?
