Ive done some smoking before but it only came out "good" once. I've done a lot of reading and now its time to step up my game. I have a COS that I am about to modify to better my temperature control. I smoked a pot shoulder a couple of week ago with y step dad and it came out WWAAAYYYY too smokey. I found the reason why but I still have a lot of questions. I look forward to learning from y'all. Gary, I have some family in Texas. They are always sharing pictures of the amazing BBQ they eat. I need to bring some of that flavor to Maryland for when they visit.
