Sounds weird, but I need to cook 6 slabs for a lunch party on Sun and thought about smoking them for the three hours the night before then wrapping them, put them in the fridge and take out the next morning to put back on the grill for a couple hours to finish.

Any thoughts, experience, etc???

Thanks,

Since I usually smoke at night I always do it this way. It will work. Just reheat with moisture so you don't dry them out. The oven would work and then finish on grill is the way I would do it.

Good luck!
