Does anyone know the reason for the MES maximum temperature setting of 275?
The reason I am curious is because I have a PID with its own power relay that I want to attach straight to the 800W element in my MES. Since my PID temperature controller doesn't have the input limitation of 275 (and it has it's own thermocouple so it won't need to use the one built onto the cabinet), I'm thinking that it can go higher.
My concern is if the maximum temperature of 275 is because the smoker itself will warp, or the door gasket will melt / fail.
