Hi there. Are you going to make it in a smoker, dehydrater, oven? Burger jerky? Are you talking about one of those jerky guns that lays out a strip of ground meat?
Here is one for Teriyaki. Has garlic and sugar, but I think you could substitute the sugar for honey no problem.
For a 3# batch, you will have to adjust if making more or less.
1 tsp salt (Kosher or sea salt)
1 tsp ground ginger
1 Tbl brown sugar
1/4 tsp ground pepper
1/8 tsp cayenne pepper
1 crushed garlic clove
1/4 cup pineapple juice
1/4 cup soy sauce
You can omit the 1 tsp of salt if you like as soy sauce is salty already. (personal choice)
I would say start out as a 3# batch and if you think its something your gonna like, maybe make small changes to the ingredients as you see fit to suit your own tastes.
Hi again. I went and checked out your first posts to the forum, seen you were using a gun and dehydrator. No problem, that recipe should work just fine on that. Remember to take some pics so we can see. If you try that recipe, let me know how it turned out.
today the wifey and i are making up a batch of jerky that she really likes ..
its just a pre mixed pack of mesquite spices..but she likes to use turkey burger...
tomorrow i,ll try the recipe that you supplied,but im thinking of using maple syrup as the sugar..what do you think?is maple syrup ok to use?
sorry for the dumb question here but were you said to use #3 batch

im going to try and make up a batch tomorrow...i will double up your recipe to make 6lbs and give it a go with the maple syrup ..

I do jerky on my dehydrator, have used maple syrup a number of times and it works great. I tend to go pretty light on the salt when I use syrup though, as I want the sweet to stand out more.
