Sorry for the delay with my Turkey Day report... it's been a busy week!
I took a big risk and smoked my first turkey on the big day. 13 pounds of yummy goodness. Brined for about 12 hours with salt & sugar (of course), some white wine, fresh rosemary, thyme, and a pinch of this and that. After the brine, I added a sliced apple, sliced onion and some celery to the cavity. Slathered with mayo and covered in a McCormick's poultry rub and threw her in the smoker. I also bought a hickory smoked spiral sliced ham and added some more smoke to it. Everything turned out fantastic. Leftovers were gone the next day.
Took some of the bird and used it in a turkey soup. Boy, does that smokey flavor shine in a soup!
One of my guests. He ate a lot. He was my new smoking apprentice for the day and wanted to learn everything there was to know about the process. I think he was a bit overwhelmed!
OH MY GOD! HE'S DEAD! Must be smoke inhalation...
