I need a timeframe for cooking tomahawk ribeye

Happy fathers day. Cooking a 2.6LB ribeye about 2.5" thick for Dad. Planning on smoke 220F and reverse sear .Will pull out of refrigerator at noon to bring up temp. How long should I plan for the 220 smoke before sear. Thanks

Good luck on your cook today….. just note that they will carry over cook a lot while resting…..ie if you pull it at 130 and it will hit 135 to 138 before it starts cooling….. so you can pull it when the center is 125 ish after the sear it will be edge to edge pink as long as you sear it hot and quick, like 2-3 mins per side tops…..

Thanks, it was a fun build, especially making all the custom elements come together and function! Most of the build was design as I went.... ie basically just some rough sketches.

You might appreciate this build my boy me did....well still doing, hoping to finish it up later this year. This one was full blown model designed.....Made things go much faster.....

Finally was able to see your other build and truly enjoyed it. What did you use to cut your 3/16" plate?

An Evolution low RPM metal saw 7-1/4”. They have replaced it with a different model now but the new model looks like it will do a fine job as well tx smoker tx smoker can give his two bills worth as I believe he has one too.
