Hello, Would like to introduce myself. My name is Matt and I'm new to smoking. Just bought and restored an old New Braunfels smoker. It was weathered from sitting outside and had some surface rust showing but overall it was decent shape. Just needed a little TLC. I don't know anything about smokers so I'm not sure if this is a decent unit but it's very heavy so it seems well built. A few weeks ago I tried it out and smoked some Salmon and a chicken. The salmon turned out great. The whole chicken was good as well but took forever to cook. Lesson learned there.
Anyway, I plan to step it up to and smoke some ribs tomorrow. From a brief search it sounds like the 2-2-1 method is popular so I plan to give that a try. The question I have at this point is about the wood that you use to smoke. How much do you use and how long to soak it for before putting it on the charcoal? Do you put it all on at once or feed it wood as you go? Any insight to this would be appreciated. Thanks.
ps. since this picture was taken I made a few recommended mods to the smoker. I added a temp gauge at grill level, extended the smoke stack down to grate level, and added a baffle in front of the smoke box.
