Hello everyone. I'm a long time charcoal griller and have dabbled in smoking with indirect heat and soaked wood chips in a old pan on the coals. The results have actually been pretty good, but it is tedious and I want to do it better.

I also make my own sausages, and I want the ability to cold smoke cure them before freezing. I also want to cold smoke fish and cheese.

I have already begun my project of a refrigerator conversion, and I will post some details about it in that specific forum.

This site has been a wealth of information and reading through old posts and seeing other builds has been a great help in making my decisions.

Thanks to all of you for the info and warm welcome. I signed up for the 5 day course yesterday, and just got my second installment today, really great stuff.

First off welcome to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
