Hello everybody just a quick hello to introduce myself...i am Jason from west yorkshire uk....have been here for the last 13 years ....moved here from southern africa (zimbabwe)...have always grilled over coals or as we call it braai...have had a bullet smoker in the past but have just got a oklahoma joe highlander offset smoker which i am currently trying to get decent results out of...also have a couple of poitjies...which is nearly the same as a dutch oven....just having a couple of issues trying to buy the right wood in the uk....so hopefully i can get some pointers in the right direction from your forum....thanks all cheers for now Jason

Hi Wade...I have done a turkey and some chickens in the offset...at first I was using charcoal as a fuel but was battling to keep a constant temp...i have since then taken out the baffle plate that I had made and have found that it was choking my fire
This last weekend I got some wood to try as a fuel and my temp was right up...the only wood I could find was ash...i think I was getting too much smoke off it....what do you guys use as a fuel for offsets....will take a couple of photos this afternoon as going to have another play...will eventually try outpork buts etc once I get temps sorted out...thanks.for the welcomes and advice everybody cheers for now..Jason
