Hello,
I've been following the forum for awhile now and am an amateur at best in smoking. I've only experimented with ribs, pork butts, some ABTs, pheasants, ducks, turkey, and hard boiled eggs. I really enjoy all of the information this forum has to offer and I decided that it was time I join. I'm hoping to try my first brisket over Christmas and my first dried beef a few days before for the family. Brisket seems hard to come by at our local meat market and only Walmart carries it locally, not only that but it is expensive (meat market said they could get some but it would be $9/lb.). I am in the process of building an insulated "shell" for my Bradley 4-rack smoker in hopes that it will help me with smoking in cold temps (currently 21F here). Thanks for all the information that a lot of you have provided me. I'm addicted and hope to improve my skills (or lack thereof). -Brett
