My real name is Noah, and I am excited to be here. Although I am new to this forum, I am not new to Jeff's rub and sauce recipes. Having said that, I would still consider myself to be a novice smoker (just spare ribs, brisket and chicken so far). I am looking to change that if I can. I am a Paramedic by trade who started an education company a few years ago. Things are going pretty well now so I can more easily dedicate time to learning the fine art that is smoking meat. I have 2 smokers. One is a Char Griller Pro that I hope to seriously use in short order. The other is a COS that has worked really very well. Now that I think about it, I believe it is a Char broil also. I also purchased the pitmaster IQ 110 recently but have not used it yet (we still have snow on the ground up here and I can't get the smoker above 170 degrees).
Anyway, I am really looking forward to tapping into as much of your experiences and insights as you are willing to share. You will find me to be an attentive and eager student.
