So I have just joined after reading numerous other posts. Most recently about the Brinkmann Trailmaster Vertical smoker, which I recently bought online and new I would have to make modifications. So that is where I'm going for my new smoker as much as I'd like a Backwoods Smoker, the reality is that it's not happening soon.
So I am from the Boston area but have resided in NJ for the last 8 years. I've been smoking for most of those 8 years. I've done, chicken, turkey, wings, ribs, shoulder and brisket. I'd put my emphasis on ribs with shoulder and brisket being most other. Present.y I have a entry level, Masterforge that I bought at Lowe's for $149.99, 8 yeas ago and have certainly got my monies worth. It is rusting out and I've just purchased the Brinkmann Trailmaster and will be ordering the mod kit with gaskets and latches with some RTV as well as I want this sealed up tight befroe I start.
I have recently come back from Memphis in May as part of the Totally Boar'd team where we can in 15th in Ribs. Up from 87th a year ago. I work closely with a friend of mine in the same town here and we've started a KCBS team and are entering into 3 local competitions this year under the name of OCM (Oink, Cluck, Moo) BBQ.
Down at Memphis as part of the bigger team we had the luxury of cooking on an Old Boy and a brand spanking new Backwoods Competitor....boy if I only had an extra $4k sitting around for that. Excellent way to cook.
Anyway, looking forward to the forums here on SMF. Excited to compete out side of Memphis. Just did a shoulder and 3 racks on Saturday. Weekend before Memphis, I did 3 racks os St. Louis and a brisket flat...that's about all for now.
Best to all,
