Flank Steak on the santa maria

I like to grill flank steak at medium-low heat, maybe 275-325.
Dry brined overnight, then a beef rub (no salt) before cooking over red oak.
Tender and juicy with good beefy flavor.
Served with chimichurri, sweet peppers & onions, Caesar salad.

Looks good Steve, Flank is a favorite of mine, but I priced one out yesterday and it was 40.00 for a single medium sized steak. Too expensive for my pay level.

I have to admit, I was in the shop today just staring at the x-fire dreaming about building a fire in it….. soooooon I hope!
 
OOH Yeah, looks great!! I bet that hit the spot for sure!! Would love a SM grill!

Wish I had space for a rig like that. Steaks look awesome. Flanks are hit/or/miss down here. Usually sold two in package and pretty thin. Great for sloppy tacos though.

What used to be cheap cuts are now expensive cuts.

Beautiful meal! Every time I see a Santa Maria cook posted I feel like I need to add one to my arsenal
They are fun to cook on, but also burn up the wood.

PERFECTION!!!!! Man oh man I would do the dishes for a week for a plate of that!!!!
Good timing. Our dish washer just broke, and we are looking for a new one.

I would of liked leftovers for sandwiches, but left it for the wife to eat while I was out of town.

They put 2 in a pack so they can get rid of a not-so-good cut.

Man, nothing about greatness right there. And as always I love the view over the grill.
