I used my combo oaklahoma joe I modified to keep the smoker cooler. I used the hood temp gauge and kept it at 250 for almost 7 hours for 6.5 lb flat brisket. It pushed through the stall without wrapping and for the most part is pretty juicy. I used hardwood chunk charcoal and hardwood briquets with applewood chunks thrown in once in a while.
