Packer time for family Christmas get together yesterday. Two full packers, before trim, 17.5 and 16.5 lbs. Angus Choice from Sam's Club. Cook was 230 over about an 80/20 blend of Lumberjack Mesquite Blend and Hickory.

Trimmed and seasoned Friday afternoon, placed on the Silverbac at 9pm Friday to run all night. The SB is pretty big but as you can see they didn't fit too well and so they did a little spooning for a while. First check at 330am they were tightened up enough to fit over the drip pan without being overlapped. Strangely, the one on the left (#1)was probing like butter on point and flat at 730am so wrapped in foil/towels and rested in cooler. # 2 came off about 1030am and off to rest.

Both were delicious but #1 was the better of the two. The flat on #2 fell apart when sliced but wasn't dry.

My wife asked if I bought the whole cow. #1 at the back, you can see the flat on #2 is pretty wide.

#1, looks a bit dry in the pic but was plenty juicy. Sorry no pics of #2 sliced, we started eating it too fast!

Homemade Icebox Pickles, made 4 days prior - delicious, will be doing that again. They look a bit murky, they had just been shaken at pic time

Briskets look great nice smoke! I was contemplating throwing one in the smoker tonight for New Years tomorrow...haven't decided yet
