Chatting today with my butcher mate about jerky and mentioned that the last lot I did was with Jeffs recommendation of eye of the round or salmon cut from the sirloin as we call it and I was well pleased. Well out of his fridge he produces chuck tenders or poor mans fillet as he called it and what a reve lation no trimming needed and @ £5 per KG not bad priced
