Couple Chubs of Summer Sausage

    One five pound chub of plain summer sausage. One 3 pound chub of Jalapeno Summer sausage. Been in the smoker since earlier this morning. Smoker is up to the final temp.

    Forgot I'm using the 12" AMNTS burning Cherry pellets for smoke.

    Looks good.  Are you using 3 igrill minis or some other set up that can work with 3 temp probes?

    I am using the IGrill 2 with 2 meat probes and 1 ambient probe.

    I'll hang these in the garage overnight (it's 38-40 degrees in there this time of year) and probably slice into them tomorrow evening. Portion out and vac pack.

    Long smoke! 3# was finished at 10 hours. The 5# chub finished 2 hours after that! All hanging in the garage. I didn't do the cold water bath to shock. So these are gonna be shrivelly.
