Copper Pot Beef Ribs!!!

So it’s been a while since I’ve done a proper smoke, but I got done with my honey do list earlier than expected and it was an exceptionally nice day so I broke out copper pot for these beauties!

Started off by starting some coals over the burner

While I was working on the coals my boy seasoned them up.

After that with a little wood working with oak and cherry we got a nice little fire going!

The good old copper pot is @ 225 deg and all ready to go!

On they go!

I let the them run at 225 for 90 mins....

Next I pushed the copper pot to 325 to give them a nice sear...

They roasted at 325 for about 45 mins....oh man starting to get hungry

Next I let the copper pot settle down to 225 for another 45 min....just fair warning when finishing ribs the devil is always in the details!

So to fend off the devil, here are the little details.....first some salt crusted Yukon golds!

Next some nice pearl onions pan roasting in some classic olive and butter....

Following next in the pan were some shroom 1/4s......

At the right moment the pearls and 1/4s were joined together with some fresh chopped thyme for a flavor party....

Since the little details were becoming clearer it’s time so see what the copper pot has done.......it’s like opening a present on Christmas morning!!!!

The hardest part now is waiting...... resting should just be called waiting impatiently!

Finally the moment for the beef to share its goodness arrived......The Slice!

I know this is a long post but I had to wait a long time for these baby’s.......so here is what was cooked up!

Of course my wife had to scare away the devils details with her Lemon Thyme spinach salad! It’s a patch of Heaven

Top shelf stuff right there, was thinking hot wings /fish for supper today but but now I'm unsure what I want lol

Thanks kONe! They yes were very juicy! Theses were very thick with meat, just love it when the butcher leaves more flesh and at 2.49/lb it’s even better!

thanks David! As far as beef ribs go I have done them many ways, ie From low and slow to hot and fast. My fav is a couple of hours over the fire in our x-fire, next is like I described above, then @325 on the pellet for 90min and last 225 for 4-5 plus hours....

thanks Ryan! It sure was fun, both the cook and taking pics! The fire fork was like oh it’s time to put a fire in it!

Awesome Civil, those ribs look phenomenal as does the whole meal! Glad we are starting to get some better weather!

I really like that copper pot smoker! Not the same.... but picked up an old Coronado fridge, gonna be the next project for the kids and myself to convert to a smoker.

Thanks WHB! Yes better weather was nice! Although did you see the wind warning? Up to 70mph tonight and Monday....

nice on the fridge build with the kids! Any think built with the kids is a home-run for sure!

That plates looks like a masterpiece. I do love your copper-pot.
