Happy Sunday fellers and non fellers. Made up a batch of debris fries last night. Based it off of a local Cajun restaurant me and the wife love. Since we aren't going out to restaurants still I decided to make from home. Most of the time debris fries are made using pulled brisket but I had a chuck roast. Here goes.....
Started out with a 3lb chuck
I injected heavily using this. Pretty delicious and added tons of Cajun flavors
Let it sit in fridge a few hours then rubbed down with holy Voodoo rub
Then onto the smoker running 225 using pecan
After about 3hrs IT was around 152 so I wrapped her up in some butcher paper. The chuck was full of juice
About another 4hrs and IT was 210. Pulled it off and let it sit on counter for 30min. Missed that pic. Was later than our usual suppertime and I got in hurry mode. After the rest I pulled it. Was fall apart and super juicy and full of flavor
While I pulled it the wife was cooking a huge batch of crinkle cut fries. Traditionally you would use potato wedges but that's what we had.
Spread the fries out on a pan on top of some butcher paper and put a heavy layer of cheese on top. Then on top of that the entirety of the Cajun chuck roast. Then another heavy layer of cheese. Normally you would mix up a light Cajun gravy out of the beef drippings and mix that in as well. But the hunger pains struck and we skipped it. Roast was so juicy we didn't miss it.
And out of the broiler and topped with sour cream. Wish I had some green onions but oh well lol
